
I can hear you groaning through the screen. Quinoa for breakfast? She’s lost it. I assure you, I am on my game with this one.
I honestly had never thought of quinoa as a breakfast food, but was introduced to a dish similar to this one at the now defunct Whole Foods Market Wellness Club about 3 years ago. The club was based on the principles of a vegan lifestyle, and though I wasn’t 100% on board with the science presented, they did have some good points, and some phenomenal dishes. This was by far one of my favorites, and I continue to make my version frequently.
With a the nutty texture of quinoa mixed with creamy coconut milk and banana, and the pop of bright blueberries, this dish is a filling and healthy way to start your day. With plenty of protein, fiber, healthy fats and vitamins, you couldn’t get off to a better start.
For many families, oatmeal is a breakfast staple. Well let me introduce oatmeal’s distant cousin, Quinoa.
Though quinoa is also delicious as a savory dish, it is a bit of a chameleon, able to blend in with its surroundings. A pseudograin, quinoa is often thought of as a side dish with dinner, or something to top a cold salad. But just as every person asked about Madonna always says, this grain has reinvented itself. Get ready to sing its praises.

- 1 cup quinoa
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tablespoon vanilla extract
- 1 can full fat coconut milk
- 1 cup water (plus a little extra if needed while cooking)
- 1 cup frozen pineapple
- 1 cup frozen blueberries
- 2 fresh bananas, peeled, and cut into ½-inch pieces
- Hemp seeds for garnish
- Place the quinoa in a fine mesh strainer and rinse under cold running water, drain.
- In a saucepan over medium-high heat combine coconut milk, water, vanilla, cinnamon and nutmeg until all of the coconut milk is melted into the liquid.
- Add quinoa and pineapple. Cook for approximately 30 minutes, adding water if necessary.
- Take quinoa off heat, add frozen blueberries and chopped banana. Stir to combine.
- Sprinkle with hemp seeds and serve with additional coconut milk.
